I’ve been asked numerous times to post about the foods I eat and how I prepare them.. I really don’t want to turn this into a cooking/diet blog, but I’ll happily share my food and recipes on occasion.
This is my first cooking post- a veggie omelette. Simple enough, right? I scrounged up some veggies from the fridge to go along with my eggs, and some spices, and kind of just threw it all together.
1- I knew from the start this was going to be a big omelette [I was SO hungry!], and so I cracked 5 eggs, and chopped up half a medium sized onion, one mushroom, half a medium sized tomato, and a few spinach leaves.
2- Then I just dumped everything into the egg bowl- a little soy milk, the chopped veggies, some golden flax seeds, cracked black pepper, a touch of garlic powder, thyme, and some parsley flakes. And of course, mixed it well.
3- During the mixing process, I had coated the pan with olive oil and set the heat to medium. Once it was warmed up, I dumped in the omelette mixture.
4- I cover the pan with a lid to keep the heat in and cook the top part of the omelette. Once it starts sizzling, I like to turn the heat down a bit, somewhere between low and medium- it will vary from stove to stove..
5- Once the top part is cooked [the bottom is obviously done by then], it’s ready to eat!
6- I don’t use any utensils in the cooking process- I just tip the pan and the omelette just slides right out onto the plate. Flip the second half over the first in the ‘sliding process’, and voila! Done!
Just about anyone can do this- I am no chef by any means. And it was delicious! [As well as nutritious..]
